I went to "Anantara Spa" last month.Their suites are like small villas but do not have private pools (they have plunge pools in the rooms). Excellent Hotel, and service was superb. Good Spa facilities also.The girl will love it. It is just outside Centre and has free transport every hour or you can get local Tuk tuk or Taxi for around 120B.
You can get to Hua Hin easily from BKK. Most travel agents can organise a car (approx1800/2000) or you could get a mini bus around 600b.

Gigantor,
Try Evason and Supatra. Both have pool villas with private pools. Price range TBH 9,500- 15,000 depending on the season.
I have not stayed there but both were highly recommeded by guys who used it

Yeah, except they are not in HuaHin... they are in Pranburi.
HuaHin has a lot of beautiful little resorts... the Anantara might be ok for you... or if you don't mind a 10mn rocky drive, the AKA has beautiful pool villas
