Just saw this thread, but I was in Wollongong and Sinny a few months ago, so here's part of my tale.
Wollongong: I also stayed at Novotel (with a work group, but separate rooms!!). A fun place within 5 mins walk is the "NorthGong" pub. A lot of Uni students getting smashed and vulnerable most nights.  I managed to "almost" pick up a girl (a cute single mum, not a student). Everything was going well, and I soon had an invitation to her place, as the pub was closing.
My boss was with the group, and actually suggested I don't to head back to her place, as we had an important early morning presentation which I was leading the next day, and he could see trouble brewing. (Good advice as it turned out). I invited her to join me in Sydney the next day, but she couldn't, due to babysitting arrangement. We still keep in touch by email, but it will be mid-next year before I go there again.
Sydney: one night there on the way home to Dubai. Still with a work group of mixed ages, from young and trendy to middle-aged (and trendy  ). I did a bit of research, and "Three Wise Monkeys" Club was recommended. We were told the average age was 30. This was true, statistically. However, most people were actually in mid-20's, but there was a freaky 70 year-old guy there, so statistically, the average age probably was 30.
Had a good time at Three-Monkeys. Lots of single girls (including Asians), but I didn't get lucky.

Someone above mentioned the outside-seating cafe at Kings Cross next to the fountain. There are two cafes there. One is the infamous Beef and Bourbon, of criminal fame. The one next to it is the Fountain Cafe. My group sat there, in the light rain on a cold night, and we were entertained by a drunk Canadian girl in bikini playing in the fountain late at night. Then she came to our table, wet and dripping, and asked for accolades as her friend video-taped us. Bizarre.
While in the Kings Cross area, we took a young Arab colleague to a strip club. There was a 50 year old woman playing with a whip an lighter fluid. God she was ugly. I think our young friend has the wrong idea about Aussie women now (or maybe not).
