does anyone know a bar in bangkok or phuket where a woman could find a thai 'barman' to travel around thailand for a week or two with her.

At most Gay bars in BKK there are many good looking straight guys working there who would happily accept payment to be a companion (and of course if she's at all attractive it might cost her nothing other than food and accomodation). Simply approach a manager or bartender and ask for recommendations. It's been done many times before.
Try Silom Soi 3 for starters...

You can have her just try or saying "hi" to any Thai guy she finds attractive (if she is somewhat attractive). Local society doesn't place any constraints on guys (a total double standard) to just pick up some girl off the street or out of a restaurant. It's as easy as "can you give me a ride back to my apartment, hotel.... would you like to have a beer before you go (come)?" Done and done.
If she's not attractive there are bars of working guys, although I've never been to them (obviously). These are often bars where working girls hang out to take the edge off. I heard the guys are pretty good looking and really put on the 20's/30's gentleman facade/show.
