Brother Caronte, I have a food and beverage services background. I would concede that a top-end restaurant or a fast-food franchise in LOS *may* have the same sanitary standards as in the West if the employees are rigorously trained.

But for 95% of the downmarket, independant restaurants (and the food carts) there is simply no comparison to what you would find in the West. Almost every restaurant you visit in Thailand would fail an inspection in the West.

The main mitigating factor -- the reason more people don't get sick -- is that Thais tend to buy smaller lots from their purveyors and there's less time for contamination to grow to dangerous levels.

Storage here is poor, personal sanitation is fair-to-poor, food handling is mediocre at best.

Many years ago I worked in the uni hols for Randwick council in Sydney and you wouldn't believe the lack of health standards of most restaurants and fast food places. In fact, believe it or not Maccas was one of the only places not to have been warned or fined for unsanitary conditions.
Some of the health reports from fast food placesand restaurants were downright diabolical.

If one's really concerned about this sort of thing, and your stay is less than 2 weeks, have your doctor prescribe you a 10-14 day supply of Cipro, or other broadband anti-biotic. Works in a nice prophylactic manner to keep the tummy happy, and keep you safe from other nasties.

If you're alergic to antibiotics, then you're SOL in LOS.

Sometimes the 'buggies' just love a dose of antibiotics though.
Mutations in this part of the world are getting scary.
A lots of 'buggies' are free range, meaning there ain't nothing that kills 'em,
only makes 'em more angry.

Dr Hztink the well known 'quack'.

The trouble with anti-biotics are that some doctors prescribe them like sweets and the bugs get used to them. Also antibiotics kill off the necessary 'good' bacteria in the stomach as well as the 'bug'. Then it is often a good idea to eat 'live' yoghurt for a while to put back what has been taken out.

This is true. Also true however is that a staggering proportion of Western Restaurants would fail also. In Europe 92.5% of food poisonings happen outside the home - The majority of which happen in restaurants. EHO's are not rigorous enough in closing places down, and are more inclined to give warnings and fines.

Storage is one of the largest contributors, but thankfully most places have a brisk turnover and food is cooked to order and freshly. Food that is cooked and stored inncorectly is the single largest contributors to food poisoning in the West.

The only times I got food poisoning in Thailand were in 'Western Tyoe' Establishments. One in a five star hotel in Krabi (I blame a bit of salad that was served with a haburger) and the second was in a pizza hut. Both times I was very ill for about 24 hours.

And Caronte, I would imagine that the point that you Friend the Chef was making, wasnt that rooting through garbage is a valid way to make a meal, but more so that a top Chef can turn what seems unappetising into a mouth watering meal, and that indeed a meal can be created from anything.
