Thais speaking english often omit the verb form indicating the time. I am unsure what the question above means. It could be "what have you done today?" or "what are you going to do today?" What is the most probable meaning?

At a rough guess I would say if she is asking you that first thing in the morning that she is asking you what you are going to do today. If she asks you in the evening it means she is asking what you did today

I'd agree with Dinkum...most commonly though I expect to hear that question in the evening...the Thinglish equivalent of "How was your day?". Enjoy.
