Im starting to learn basic Thai words B/F my trip later this year. But have trouble with large numbers.
1000=neung phan or phun?
500=ha roy
10=sip
so what is the correct way of saying 1,510? is it
neung phan ha roy sip?

10 - hold up ten fingers

Trying to negotiate in Thai scares the crap out of me. I am always afraid of a misunderstanding, which is always wise to avoid with Thai's. Even though most street sellers know some English, there is a reason they carry around those calculators.
