1200 is being a bit frugal for a holiday if you want to enjoy. However, if you don't drink and already have a lady.....that takes out most people's big expenditures.
What about an island like Koh Samed for a break? Tub Tim are the cheapest chalets at around 350 baht, nice beaches, walks, sunsets. Food vendors with Thai prices.
Travelling there by bus and boat is really cheap.
Accomodation is a big draw on 1200. Try travelling overnight to a few places on bus and train to save the baht.

Thanx Bros. Let me clarify a few things.
I normally spend 1-3000b/day incl of girls and room. I was just there from Dec. 11-Jan. 5. I have a little extra money and can take a week of sick time that is why I am doing this. I will be back in June for 2-3 weeks.
