If some of the hotels share the service charge with their employees, I assume that is reflected in their base salary (which might be lower). However, if their base salary is the same as other properties which do not share the service charge, it reflects the fact that these properties want a higher caliber employee and are willing to pay more.

Whatever, it still does not remove the fact that when it comes to paying the bill, your either happy, or your not. If the service charge is applied, I note that at the start, so my expectations of the kind of service I receive will be higher than those places where service is not an automatic add on. It is basically a mini-free market when the service is not on auto. The tip curve being higher relative to the service curve being higher. Automatic 10% service is a slam-dunk for the establishment. MN, your complaint about service should occur when bad service occurs, not at the end of the service period. For instance if your steak is not to your liking, you do not eat it, then complain. Service at 10% auto is the same. Complaining after does not give the service staff time to rectify the displeasure. Nor is it, I think, too cool.

Might not be cool, but I not like spit in my soup or my steak wiped accross the cooks arse either, all of which could happen after a complaint, but before I get the meal. And if they think they are good enough to auto charge the 10%, then they should be good enough to not warrant complaints and accept any complaints at any time. Its the management that adopt that policy, it is the management that do the training to ensure that policy is worhtwhile. If it is not worthwhile, I see nothing wrong with complaining about it at any time, during, after or even before with my perfect hind vision.

Hey humans are human. Ever had a bad day when you wish you had done better. And if you are in a good restaurant, the cook should not have time to run your steak between his cheeks...maybe just add a few nose pickngs to the sauce. What can hurt about that huh?

If I am not mistaken there was a lawsuit brought by a restaurant in HK a few years back. The customer was sued by the restaurant on non-payment of the bill - service charge - and the courts upheld on behalf of the restaurant since it published that it would charge for service. The customer had made a plea that the service offered was terrible and not deserving of any charge. I would be surprised if any place in LOS actually gave the proceeds (100%) of service charge to the service staff. I think it goes into the register and stays there.
