The plan was to book a one way ticket can I even do that? I read somewhere Thailand insists you have a return ticket too… I just wanted to stay till my money runs out.

Theoretically you are required to have a ticket out of thailand if entering on a tourist visa, however in practise I have never been asked to show it, but they could ask. Credit card insurance normally lasts for up to a month per trip. If your still having trouble finding something simply google backpacker insurance.

jetseti, A RT Ticket is cheaper than two one way and you can buy one with an open end and a one year validity...

Your local Travel Agent or you may call the Airline directly. Ask for an open ended return. This, of course, would not be available from discount Travel sites as they work on a 'fixed seat' basis...

...and how you're gonna buy a return ticket once your money runs out? Beg on the street? Earn your money as a travelling ministrel? Be an English teacher? Get deported? Not only that, one way tickets are usually more expensive than r/t tickets, and several airlines issue 'open' tickets, meaning you can change your return flight with up to a 6 months margin. i.e. China Airlines is such an airline, even if you purchased the ticket from a discount broker - you can change your return flight for up to six months.

*they* don't ask -- the airline is responsible to check and make sure... and they do. Travel agents and airlines will not book you or sell you a one-way ticket, if you do not have the appropriate visa. Likewise, even if you get a travel agent to sell you one, they check again upon check-in, and can (and will) refuse you if your papers are not in order.
