I 2nd the river cruise. I took my fiancee on it and she was thrilled.
A year later, I took her parents with us and they were amazed - having never done anything like this.
However, take a look at the dinner menu (usually a buffet) to make sure there is something that she will eat. My girl eats lots of things, but her parents stuck to plate loads of prawns.

We did Yok Yor marina Restaurant. dinner cruise on Bundrarika boat along the Chaophraya river.
The boat starts from the pier of Yok Yor marina Restaurant daily from 8.00 pm. 2 hours for sightseeing while serviced a delicious dinner.
The description of historical place in Thai and English language beside the bank of Chaophraya River for understanding can be done on the out way. And the band with harmony singer in karaoke style arranged for amusing on the way back.
The outstanding of Yok Yor dinner cruise is amusing, delicious on clean food good taste at the budget price.
The shuttle boat for Sathorn BTS station pier free of charged. Provides daily contact the representative at the counter pier. Either or River City shopping mall they have the agency for free shuttle boat can be serviced daily from 6.00 pm. to 11 pm. daily.
Everyone should do this once, Good way to start the Night

I appreciate the input, I did go back to 2005 on this subject before I posted, It seemed anything that old would be outdated. My girl and I ate outside last year at State tower, I need to find an equal or better alternative for the near future.

The top of State Tower. All the restuarants can accomodate differing tastes including even Thai. Very romantic at night (except when it rains).
If the GF is really only up for Thai food, go to Shangri La hotel - the Thai restuarant is in replica Thai houses looking out over the river. Good food and romantic.
On the other side of the river, Peninsula Hotel is also nice- looking back to the skyline of the city.
For Italian food, go to either Gianni or Giusto. Lovely setting and great food.
