As stated, some service staff are just too shy to get up on stage and expose themselves, but are very willing to be barfined to make extra money (and have a good time). Not all are older; some younger ones start there (some migrate on to be dancers when they see the money to be made and lose their reserve for exposing themselves, others stay staff).
By the way, never ceases to amaze me how a girl can go from naked on stage to the "Thai towel trick" when she's alone with you.

Has been suggested to me that some girls "downgrade" to dek-serve in the belief that punters think the servers are less experienced, near-wirgin even, and can command more money that way. I don't buy it, but that school of thought is out there.

IMHO I think they work as bar staff mostly to be able to choose the costumer..

The service staff seem to be lower on the pecking order than the dancers. That's for sure. A lot of them are real sweeties and if you want to get their attention buy them a drink - hardly anyone ever does and it has a higher status to them than just giving them your left over change at the end.
Was upstairs in Electric Blue in Pattaya a couple of months ago early in the evening during their cheap drinks happy hours. Hardly a punter in the place and all of them just there for the booze. Lots of girls on stage and on the little upstairs carousel. The girl selling the ping pong balls (you use them as 20 baht tips that you throw to a girl you like) hardly had a customer except me. Going down the stairs she dropped one and as it bounced around the floor one of the service girls caught it using the front of her skirt as a net and was running around holding her skirt out in front of her making a joke of how she had got a tip. Harmless fun.
Next thing one of the Mamasans collars her and - in what seemed a totally un-thai thing to do - proceeds to rip strips off her in loud angry machine gun thai in the middle of the bar. Snatches the ball off her and for some reason gives it to one of the girls dancing on stage.
Couple minutes later the rightly upset little service girl is telling the story, complete with actions to her co-worker just downstairs from where I am sitting. When she actioned the bit about holding her skirt out in front of her I dropped a couple of ping pongs into it. Surprised look on their faces was priceless and I could not get a drink without them getting either side of me and rubbing up and down like cats for the rest of the session.
Nah, I got a soft spot for the servers and yeah, damn those little uniforms are cute!

I had an odd experience with a server in Silver Dragon a few months back. My girl and I were in on a slow night and one server just latched on to us, hovering, blocking our view of the stage.
She asks my girl for a drink in Thai (refused) and when she goes hong naam, the server asks me again in English. I shot her down saying her bosses' beer was so expensive (125 baht a la Crown Group and their toadies) that I had no money left over.
Suprisingly, she seemed to get the point, even admitting that many old customers had complained and weren't coming around anymore.
I figured that would be as close to an apology as I would get, so when we made check bin, I swept the change tray clean, but put a 20 baht note directly into her hand.

Good post. Some Mamasans can be real bitches and some can be a real laugh.
I always save a few ping pongs in the Dollhouse for the service girls. No problems. Some of the best laughs I have had is with the service girls. Being known and friendly with service girls and Mamasans can get quite expensive as 'Mr Soft-touch' here usually buys them a drink. The biggest problem I have with women is they all think I am rich ! Must be something to do with the body language. It's got nothing to do with wealth since I am now 'Third World Debt' ever since I discovered Thailand !
