Many if not most of the young generation of Thai-Chinese don't speak Chinese very well, from what I gather. Ordering food in a Chinese restaurant is probably their limit. Their grandmothers will love you though 
This probably borders on breaking some religious or ethical standards, but you could try visiting a Chinese Wat, of which there are many in Thailand. I'm sure you could find some young thing to chat up.
If you can read Chinese, why not check out some of the HK websites? There must be a few that discuss Thai hotspots (with a Chinese slant; no pun intended, I think).

you'll find the most young Thai Chinese are more likely to speak Teochiu (Chiu Joh hua) than Mandarin. Although of lot of us can speak Mandarin as well (passably, not anywhere near fluently). If you speak Hokkien, you'll find you can communicate with Teochiu speakers easier. Cantonese, there are some sprinkled about as well.

Tell the owner to pay whatever it takes to get that girl's picture on the website. Many of us are not going near it until there is some more hard evidence that the place is worthwhile.
