The percentage is how many times the girl has been booked in the past week. The higher the bookings, the higher the percentage, meaning the better the service. Pretty fascinating, if you ask me. Another reason for a high percentage is word of mouth, or repeat visits from clients. Someone must like the girl. 
If the arrow is up with a high percentage, means she's *intense* right now. If the arrow is down, but the percentage is high, means she's at her peak. This is usually for the veteran girls.
