Regarding bartering vs. set prices vs. 'silent bidding'
I have to disagree with Minder about the bartering process. If you're a price sensitive newbie then why wait until you're already interested in a specific bar girl before bartering? Why not get her terms when you're still just barely curious? You'll probably get a better price than if you're already interested. No matter how cool you think you are, these girls can see right through most newbie defenses and sense your desire from a mile away.
Also, if you don't have any specific needs you probably don't have to bother with bartering or even ask the cost in many cases. You can just take the girl and go have some nice conventional sex before stuffing some cash in her purse. If it's decent then pay the going rate, if it's good then tip liberally, if it's bad then pay the minimum and send her on her way. If she threatens you, well, either tip up or live dangerously. Bartering is mainly necessary when you're interested in specific needs like LT, BBBJ, CIM, AP, DATY, etc.
Regarding bar girls and breakfast...
Sure, you can take your bar girl to breakfast and nobody can kick her out or anything. However, some girls will be a little uneasy about it, so don't be surprised if it takes a little coaxing on occasion. Just because a girl is willing to let you punish her back door in private doesn't necessarily mean she's dying to eat breakfast with you in public. Some girls are very affectionate in public while others are shy and standoffish and still others may simply not like the food on offer.

Regarding early openings...
I don't know of any go-go's that open early in the day with girls good-to-go right from the start. Current regulations and trends seem to be incapable of supporting a full-on 24 hour party town in today's Bangkok. However, that shouldn't stop you from entering your favorite go-go early just for the hell of it. It's interesting to walk in before they open just to see what it's like and it's a rather different atmosphere compared to the prime time hours most of us are already familiar with. If they don't know you they will probably tell you they're closed and might ask you to leave, but if you're already a regular you can probably just hang out while they get the place in order and watch the girls get into character.
Of course there are a couple ways around these late openings. The best method is to simply keep track of who you want to f*** next and get her number before you part ways. Then call her at your leisure and schedule your next session for whenever and wherever you want. Oh, and whatever you do, don't become the next clueless sponsor! When you get on the flight back home delete all the numbers and email addresses you've collected and kiss those fake relationships goodbye forever. You'll be able to meet a whole new legion of fake girlfriends on your next visit, so don't bother trying to live in the past unless you've got money to burn.

A go-go bars in Bangkok don't open in the afternoon. Some go-go bars in Pattaya open for business in the afternoon.
If you are looking for early matinee action in BKK, can try these the following :
Morning Night bar and Golden Beer bar, both are just steps away from Nana Hotel. Open around 11 am ;
Beer Garden at Suk Soi 7 ;
Pool Hall in Suk Soi 5/Soi 7 area ;
Lots of oil massage parlours ;
Suk Soi 22 and Washington square area
My first pick would be Morning Night Bar.
Alternatively you can go for soapy massage. A few open around 2 pm. But the best time to go for a soapy is around 6 pm.

A couple of small bars on Soi cowboy open at 1-2 pm in the afternoon. I think it was Moonshine Joint. If you really want some nice early day delights, hop over to Morning & Night on Soi 4 (they are open at 10 am!), you will find some cuties there, and they are all ready to go upstairs with you. Room upstairs is 300B for a couple of hours.
