Here's what your Cook has to do to make the Reuben for the Boys.




Reuben sandwiches are a very popular food item with hungry diners across the globe. But, how many people know how to make a reuben sandwich, restaurant- style ?

Sure, most folks know the basic ingredients. Let's see, there's corned beef, sauerkraut, Swiss cheese and Thousand Island
dressing nestled between two slices of Rye bread.

The whole conglomeration is then grilled, allowing the distinct flavors to meld into a sensually dynamic taste treat. To make a reuben sandwich, restaurant style, juicy and authentic, requires care and attention.

Assembling and cooking a reuben sandwich is done in steps, almost like a little construction project. To simply throw the ingredients together in a haphazard way, would be committing an offense against this noble sandwich. The benefits of taking the time to saute' the corned beef and sauerkraut, are evident upon first bite of the delicious reuben sandwich.

The placing of cheese- slices on both pieces of bread, grilled- cheese style, ensures even melting. The careful pouring of Thousand Island dressing, not too much, not too little, results in the making of a highly delectable reuben sandwich.

To make a reuben sandwich, restaurant style, first one must start with rye bread. Seeded or un-seeded makes no difference. To make an authentic reuben sandwich, the bread must be rye. The corned beef, which is the essence of the reuben sandwich, should be thinly- sliced and as lean as possible.

Excess fat should be trimmed from meat before grilling. The Swiss cheese should be thinly- sliced.

Probably close to a pound of corned beef for $14.95 ($3.00 extra if you are sharing it). I have always finished the whole thing myself (about 20 or so visits over the years), but don't order a combo sandwich for just one person because they are even bigger (I had trouble with that one).

They also sell corned beef wholesale in 25 lb or 75 lb packs (and just about anything else a serious deli needs). A lot of other Deli's in the US actually get their corned beef and pastrami from Carnegie. Shipping might be a little too expensive to LOS.

I'll be in NYC this weekend and will try Stage and Katz to compare vs. Carnegie and give a report. There was no way I could finish the sandwich at Carnegie last time. To be honest though, if I could have found a decent priced ticket to BKK, I wouldn't be thinking about a rueben sandwich, I would be thinking about which soapie, oily, gogo or disco to go to. How sad.

Dr. Love, I think the idea was the price of the sandwich vs. the quality not the setting. I don't go to 4 star hotels to buy a rueben. I go to a deli. And at a good Deli you can get a good reuben for under $10. I don't remember what I paid at the Stage in NYC but that probably was more than $10 and enough food for a couple of meals. But going to an ordinary non-famous deli a great one can be had for under $10.

hey how about the sauerkraut, when does it come in to the recipe?? has it to be steaming hot or warm or even cooled down??

Seen the Reuben on the menu at the JW MArriott Cafe. You can also sit outside there and watch the scenery. I think it was 250THB and definitely had sauerkrat.

WS, you didn't want to eat the Rueben at the Landmark because it was too expensive. Did you ever wonder why it is US$7?

The cheapest Rueben in the States I could find online was US$6.95.

Perhaps you can get cheaper Rueben's at ordinary places in Bangkok for less.

Price aside. Every major US city has many delis that have great Reubens. Most owned and operated by Jewish immigrants passed down by generations.

Landmark is probably the best in Bangkok but I can find many in every major US city better and many cheaper as many are in poor areas (old neighborhoods that years ago were good but in the last 20 years became lower income parts of various cities) Bad parts of town in many cities but great delis with great sandwiches including Reubens.

But, as this is about Bangkok my vote goes to Landmark mainly because its the only one I have tried in Bangkok! Never saw it on other menus,not exactly a Thai favorite.

Dr. L, in the first post the Landmark price was 340 baht which I think is $10 US not $7 unless I misunderstand. I'm just saying that's a lot for a mediocre sandwich. Typically it costs less is LOS for most things than they cost in USA or Europe. I can do better in many other places. In BKK I will eat Thai food and save my craving for a Rueben for the USA. I can understand if you live there, you do the best you can with what is available.
