I've been residing in Thailand for over 18 months now and I fall into the "put-on-weight" category. I fairly regularly go to gym, run and swim but I also hardly ever walk (go everywhere on my motorcycle) and probably eat too much rice in my diet now. I have found that I sweat far less than when I first arrived and I drink more beer here than I did "back home". I think there is quite a lot of vegetable oil used in a lot of the Thai dishes I eat (I rarely eat farang food) and this certainly doesn't help. The argument that just because Thai people are thin then their food must be healthy isn't terribly accurate, I feel. They are a different race with a totally different body composition.
