How safe are the chickens in thailand (I know, they are not as they are killed... but.. for us eating them I mean... ? Where can you eat good chicken dishes? Fried? Thai style? Etc.?

Chicken is one of the most dangerous foods one can eat. Very easy for it to be contaminated and you will get sick. If the chicken is not processed properly with strict sanitation practices at all stages. It will be contaminated with salmonella.
I have 4 years of experience in dealing with food sanitation. KFC is probably the safest place to eat chicken. They have and enforce standards the vendor must comply with or they will lose their contract with KFC.

Most (99% - my estimation) meat products are safe to eat if properly handled and prepared. The recommended internal temps for specific meat products (when cooked) need to be adhered to and followed. The magic number is FOUR HOURS. If meat products are offered outside of the recommended temps and times (FOUR HOURS) one should avoid the items. Common sense is also a factor in the equation.
Do not eat potato salad that has been sitting in the sun for one hour or more. I have spent some time in the military food service program. LS

Also if you order duck in a French restarant in Thailand, I suggest that you request it " well done". otherwise it will tend to be in the raw side and perhaps carry the dreaded disease.
