I did this on my bicycle, but going in the opposite direction. From Pattaya I took the three, to Bang Saen then went on surface streets into Chonburi. From there it was back on the 3.
On a Sunday morning the three should be fine, on all parts there was a nice shoulder, I don't see any problems at all.

I used the motorway carryin' my golf clubs on a Honda Dream with no problems, all the way from Ptty to just outside Bkk. I kept it at an indicated 90Kms/hour.
From Bkk I suggest that you take Sukhumvit Rd all the way, it's a pretty direct, well signposted route.
It's best to buy a "proper" helmet, wear a jacket n' gloves, jeans (no flip-flops or shorts) as you're gona get sandblasted! And, keep your lights on!
