I have no info on viet restaurants, but I guess you can ask a viet girl. If any one should know, then it should be them. Also most restaurants have most of the time pages with thai food, pages with viet food, pages with chinese food and pages with western food apart from the cambodian food on the menu.

I did not see viet places, but when you see the word "international" you can bet your life they have viet food. I think Canby is a must-visit website for any traveler to Cambodia by the way.
From my limited view ( I had 1 girl all the time last visit) the number of viet girls has drasticaly gone down since about 5 years ago. I think 5 years ago the viets were 50% of the population (in the parts/places) you would visit. Now I think it is maybe only 10%.
This is my view, so it could be wrong.
So finding them is a bit harder then it used to be. But may 2008 I saw several viets in Martini's, which is always a good place to start your hunting.
I visited Martini's almost every day WITH my girl (and her friends) because she had never been there and she named it inmedeatly "Funny Bar". That was because there were also every day 2 guys there that were totaly out of this world. One guy was always dancing like crazy on the dance floor WITHOUT making contact with any girls. (he danced better then me by the way, but that is not difficult). And there was a older japanese guy that did not dance so much, but when he danced, he danced ONLY with himself in the mirror. So if these guys were there for the girls they had a funny way of showing it. 
This amused my girl so much she had to visit every night to watch the looney's. The tuktuk driver was also at first very confused, since she always said : "To the Funny Bar" and he did not know a bar called Funny.

Many thanks for that. You offer pretty sensible advice. The info about food is important. I don't want to get sick in Cambodia and spoil the trip to LOS. I have never been sick in Vietnam.

Well, I never been to Vietnam but plan to do so within 1 or 2 years, so I do not know the food scene there.
Cambodia has come a long way these past 5 - 10 years.
I have had the shits twice there, the first 2 trips 6 and 5 years ago. But the last trip was a happy one without any trouble and I even ate with my driver, the food the drivers eat, at the Koh Kong border one time. Believe me, there are not many places left in the world if you are looking for the WORST place to eat (as a westerner that is).  
Only one of the 2 shits I can trace back to the noodle soup I ate at Martini's. So try to avoid badly cooked water as much as possible and especialy there.
If you are the type that does not go any lower then Gordon Ramsey for his food quality, then Cambodia is an absolute horror to you. But if you are more adventurous then you will have a fieldday.
I can safely say that most restaurants in PP are of acceptable quality although in our countries they would be cleaned with a flamethrower before you dare to enter.
The country is rapidly coming to the 20th century (maybe in 10 years even the 21st ) and restaurants are getting better every year. Dare to eat anything, but keep the soups to a minimum and you will have a happy time...................................... I hope.
I don't think many people ever got sick of a bowl of rice so dare to eat.

SM: There's Viet girls in every bar, but give me the Khmer's anytime. No matter how tiny they are, they all have an amazing set. It's absolutely uncanny. Supposedly the best Viets have gone to Siem Reap because of all the Asian $$$ up there. For bar and restaurant info, check out Canby Publications and Bayon Pearnik. For elegantly prepared and presented French-Khmer-Viet food I can recommend Le Metro and the River House. Unbelievable bargains IMO wj

Now I don't think that is true anymore. In the past (5 years ago) you could be right, not anymore. Outside a few in Martini's I never saw any. In Snookyville there are zero viets I think. But end of the month I will check Siem Reap for you, WITH my cambo girl, so don't think I will see the whole picture.

I have to admit that my best GFE's were with cambo girls (I have an appointment with one inside 4 weeks  ), but I have had also good GFE's with thai and viet girls, so don't throw them out just yet.

BS: I was just in PP a week ago. Every bar I went into; Cyrcee, Golden Vine, 104, 108, 136, Pussycat, Rose Bar, 69, Shanghai etc had plenty of Viets. I'd say 1/3. Good hunting in SR ! wj

I have to say in my defense that I have been looking at Cambodia through khmer glasses. 
Since 2 years ago I met a couple of girls and they stuck with me and I with them. And we, from then on, visited only khmer karaoke's and disco's. Last year I was 5 minutes out of my room and eating a meal after the day long busride from Koh Kong and hit on by a very beautiful girl that stuck to my untill my plane left 10 days later. I never even got round to contacting the girls from the year before. And because I had the best girls anyway I did not have to look for new girl(s). So these past 2 years I did not go to the usual hunting places, I more or less went native. 
And now I have the girl from 2 years ago waiting for me at the airport, so I guess your "Good hunting" well-wishing is a bit wasted on me. It could be I am not the hunter anymore but the prey.  
Ps, in her last mail she says her younger sister (I never met her) needs to visits Ankor Wat, if she could join us on our trip? I have the feeling I will remember this trip till eternity.

I have nothing against Khmer girls - I will try some while I'm there for sure. However, I speak Vietnamese at a reasonable level and that adds a new dimension to the experience.
While it's also quite possible to have Viet girls in Vietnam, the system sounds a lot freer in Cambodia.

First let me say, I have only good experiences with viet girls, all of them in Cambodia by the way.
But I think there is a dimension you have to take in, into your calculations.
A) Viets are mostly "illegal" immigrants stealing jobs from cambodians. They are NOT Khmer. So on a certain level they are 2nd rate citizens in the country.
They are also hookers, so make that 3rd rate.
B) They are more hardcore hookers then cambodian girls and more often have pimps in the shadows waiting.
Cambo girls are more thai-like, they are "good girls" but they do "bad girl" stuff.
You want to end in an alley with a dozen knifes in your guts? Just tell a cambo girl she is a BAD GIRL. Tell a viet girl that and she smiles and says : "You like? You give me more $$$."
So what does that mean for you?
It means nothing inside the relation you have with your girl, that can be as good as it gets.
It means that "the outside world" could have a more negative influence on your relationship.
Firstly a viet girl is less likely to know the ins and outs of society, the what is hot and what is not, so the world you 2 move in will be a bit smaller.
Secondly a pimp or mamasan will give her a timetable. Something like : be home at 07.00 in the morning and start working again at 15.00 (with you).
Thirdly a viet girl sees it more like a job, a cambo girl sees it more like a way of living. A cambo girl will take you deep inside the Khmer scene, places a viet girl never could or even would. A cambo girl will do the things SHE wants to do and be grateful to you for doing them. A viet girl will be doing things YOU want to do.
So I guess that what you gain in language between you and your girl could be lost on an other front. The word "freedom" is a relative concept.
These are my personal observations, they could have absolutly no meaning in your adventures, and you will only see the opposite of my ramblings. But they are considerations you should take into account.
My advice : Go with the "first come, first served" strategy. It can be viet, but don't throw away the cambo girls just because of the language. Or the otherway round. One of the best experiences I had was with a girl that could speak only 2 words english (and I don't speak khmer).
