I can't believe I'm doin this..... Teacher's Thai Curry Pumpkin Chicken (What is the word in Thai for Pumpkin anyway?) Find one dead chicken (preferably one without the flu) Remove the skin and put in a bowl for later. Boil the chicken in a couple of liters of water for 25-35 minutes with: 2 Bay leaves 2 stalks of celery (ruff cut into 10 or so pieces) one carrot (ruff cut) one large onion (ruff cut) and whatever else you deem appropriate. salt pepper etc... Remove the chicken (watch out its hot). Take the meat off the carcus and set the meat in a bowl. Throw (gently) the carcus back in the water and let simmer until the broth is needed a little later. Find the chicken skin! If you can get extra at the store go for it. Cut the skin into credit card size pieces and cook in a non-stick frying pan at med heat slowly until the skins turn crispy. (Nung gai= fried chicken skin) Remove the chicken skins as they become crispy golden brown, salt and eat. Very very good. With the chicken grease that is left in the pan add: 2 whole onions chopped (big pieces 1" square) 4 or 5 cloves of garlic (minced) one table spoon crushed Thai peppers (pet pet) Use fresh jalapenos if ya got em. some celery or bok choy or whatever. Throw in 4-8 tablespoons of butter too. Sautee all this crap for about 10 minutes on med to med high heat ( the food should be makin hissin in the pan but the fire dept should not be knockin at your door) then add a bunch of Curry Powder at least 3 or 4 tablespoons. Up to you. Now is the tricky part. Reduce the heat to med. and start to add flour ( as much as it takes) while stirring until all the grease has been absorbed. It will look like yellow to brown vegatable paste. This is called a rue. Cook this paste for a few minutes more while stirring. Now start to add the broth back in until you reach the desired consistency. You may have to transfer to a pot at this point cause your pan is too small. Chop up the chicken and add it in. Clean a pumkin and cut into one inch squares. Toss in a couple or three cups and simmer until pumpkin is tender. 30 min. (or steam or boil the pumpkin ahead of time. up to you. Don't let it ge too soft...if you know what I mean.) Serve over rice... Sh*t now I'm hungry boner a pitite one.
