1. Sadly, TGs have no interest in you unless you speak fluent Thai. That's because they only speak Thai and (a few of them) Lao. No English at all. But they understand international hand gestures, so you should be fine.
2. I think the bar's name is Gullivers, Soi 5. Just ask any of the girls there to service you between your turn at the pool table. Pull it out and gesture so they know what you mean (remember, they don't speak any English).
3. Cab drivers are the most reliable guides in the city, second only to tuk tuk drivers. Don't just rely on them to show you to your hotel, also make sure that they take you to a soapy or two before you get there, and then make them pick you up in the morning for a tour of the city. As others have suggested, gems and other goodies are on the menu. And they all speak perfect English, so that's not a problem.
