Well as I didnt come to LOS untill Nov 2003 for the first time, so I dont thik it closed in 2001!

Come to think of it, it may not be German, it could be Swiss, didnt go to it on my last trip, as I was only in bkk fow a few days either side of spending 3 weeks in Phuket, but I did go to it on one of my visits in 2005!

Texas beef is over rated. Usually a source of cheap common steaks but BIG size. So if you are in for the size sure get one. If you are for the taste - look elsewhere.

There are various grades of beef based primarily on how much marbling of fat is contained within the meat (not just on the edges of the cuts). The amount of marbling directly affects the tenderness and the flavor of steaks, but obviously impacts the amount of fat you will consume.

As mentioned above, the quality (primarily the amount of marbling) is dependent on what the animals eats, its age, and breed. In some cases like Kobe Beef, it is also supposedly dependent on how they are treated (daily massages, etc).

There are prime, choice, and select grades of steak, all of which are available in Texas and just about everywhere else. It just depends on how much you want to pay (or how much the restaurant wants to pay).

there is also the question of taste

for some reason, the more fat, often the theory goes the more taste..

I have never found this to be true for me.. maybe that is due to being raised on beef that was mostly field grown.. not in stockyards just being fattened up..

the meat is not quite as tender, but IMNTBHO much more flavorful...

there will always be those that think that just because something is more expensive it is better.. that is good for marketing types...

That's an important point. In Vietnam, they eat these little free range chickens and prefer them over the fat juicy and tender chickens that the American market likes. Those little runners are small and the meat is very chewy, very few in the American market would like these buggers.

Some people like to eat steaks and the most uneducated comment I hear them make is that the steak cuts like butter. A good steak needs to have texture and that's subjective to a lot of people. I like mine to have a good crust but have a little bit of chew to it. You can have a steak that cuts like butter if you let your steak age at room temperature for a few weeks.

Good marbling is in the meat, lots of thin white fat lines between the grain is good. The fat on the outside is what butchers call bark. Bark needs to be trimmed properly to taste good, anything over 1/4" is too much. The bark you find around rib eyes is the best IMO.

gai yang is one of my favorite foods.. you want to eat chicken, go chase them..
