Finally tried a burger at Big Mango: not bad, though still redolent of the "peppered beef patty" approach to gussied-up (i.e. disguising) flavoring to protect against any potential off-ness in the beef's actual, natural flavor -- not that I'm saying anything was actually off about it; by local standards it was fine, and the manager was extremely friendly and welcoming. (The girls however were, well, standard bar beer girls.)

I tend to disagree, I think the girls in there are substandard and the resident LB is not fooling anyone. Such low standard are the girls there that I recommend that you take a seat outside on the patio overlooking the entrance to NEP so you will not lose your appetite before your burger arrives.

Two classes of burger here guys - an upscale edition and the greasy offering we all know suppresses the wretch reflex we fight after a night of shooters:

_________________________________________

THE UPSCALE EDITION - Great American Rib Company [Suk Soi 36] is a gourmet delight, offered by a restaurant owner who is more than a mere 'foodie' who decided to open a restaurant.

Serious stuff here. The burger meat is custom ground to 21% fat content [at some expense, so not cheap by local measure - I think maybe THB220-250]. Not 20%, not 22% - but, 21%. That is apparently the proper balance determined by serious disciples of the noble burger. Cooked to order and served on a homemade bun - I think smoked or BBQ'd, but not grilled.

THE GREASY EDITION - So, your stomach churning? Feel as though you are about to pass a whole furry animal? Need someone to help steer your finger down your own throat?

As a kindly old aunt, NANA BURGER will comfort and get you through the night men. Packed with all the electrolytes, vitamens, fibre and minerals necessary to replace the ones you absentmindedly misplaced in the urinal at Angel Witch. NANA BURGER does the same thing that the renown Super Jack With Extra Extra Hot Sauce did after a night of excess [RIP Jack-in-the-Box, America, cir. mid-1970s].

Fast, cheap, eats on the fly, with a convenient, fully handicap accessible curbside wretch-atorium, if you just can't get it down fast enough.

__________________________________________

Many, many others I've sampled about town, all mentioned here, certainly have their merits - except the abomination that passes for meat at Tony Roma's [jeez, man just look at the color for Christ's sake!... it's friggin' gray!... no matter how its prepared, it is gray, I kid you not!].

But, GREAT AMERICAN RIB and NANA BURGER are where I go when I reeeeally need it.

What is the secret to a juicy burger? I was told they ground some liver with the beef meet to add moist and flavor. Has anyone heard of that before? Not sure the amount of the liver added (may be just 5% or so) but a chef at the Ladnmark told me this which shocked me a bit since their burger is the best I ever had.

Cheers and Happy New Year!

20% fat and a slice of a vine ripe tomato are the keys to me..... and of course around 5 or so slices of butter pickles....... I f***ing love pickles. I sat at the table one night and drank the pickles juice right out the jar.

Also need some fresh bacon. A decent bun. toasted.

The cheese needs to be melted on the patty.

The best burger I ever had was at the "Red Rooster" in Brewster NY...... A 50's style hambuger stop that has a steep roof with a ice cream coneon the roof....

What's so shocking about it, as long as the burger was awesome?

It was shocking to learn mixing liver can make such a good burger. Would have never thought about that...

Cheers!

Absolutely correct and very learned, if I may say so.

One note: The Big Mango uses exactly the same meat from the same source (since the same guy essentially organized both kitchens), but they fry it on an open grill rather than flame broil it as the Rib Company does. Which is better? Entirely a personal decision, I would say.

MacDonalds does that, no respectable hamburger place would dare spoil beef that way...

the BM is as far from a Fat as LOS is from La Cienega.

I used to eat at the one on La Cienega BEFORE it was Fatburger. It was called "The Gingham Dog and the Calico Cat" as late as 1966 or so. I used to eat at the ORIGINAL Fatburger on about the 3500 block of S. Western, late at night, when a white boy was a mere curiosity (kind of like LOS).

I really miss a good Fatburger, or an Eggburger...

Damn, I'm HUNGRY!
